Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef until well-cooked.
- Add in the diced onions and let them soften, stirring occasionally. Season with salt, pepper, and any optional spices.
- Drain away any excess fat from the skillet.
- Stir in the cream of mushroom soup and sour cream until well combined and heated through, about 2-3 minutes.
- Grease a casserole dish and spread the beef mixture evenly across the bottom.
- Sprinkle 1 cup of shredded cheddar cheese over the beef layer.
- Arrange the frozen tater tots in a single layer on top of the cheese.
- Place the casserole in the oven and bake for 25-30 minutes or until the tater tots are golden and crispy.
- Once it's out of the oven, sprinkle the remaining cup of cheddar cheese over the top. Return to the oven for another 5 minutes, until the cheese is melted and bubbly.
- Let the casserole cool for about 5 minutes before serving.
Notes
Serve with a simple green salad or steamed vegetables. Drizzle some hot sauce or sriracha for extra flavor! Leftovers can be stored in an airtight container for 3-4 days and reheated in the oven to preserve crispiness.
