  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • Salt and pepper to taste Adjust according to preference.

Method
 

Cooking
  1. In a large pot, start by browning the ground beef or turkey over medium heat.
  2. Toss in the chopped onion and cook until it’s all beautifully browned.
  3. Drain any excess fat to keep your soup light and healthy.
  4. Now, stir in the black beans, corn, both cans of diced tomatoes, taco seasoning, and broth. Mix everything together well.
  5. Increase the heat to bring your mixture to a boil, then reduce it and let it simmer for about 20–30 minutes.
  6. Before serving, taste the soup and add salt and pepper as needed.
  7. Serve hot with optional toppings like sour cream, cheese, and tortilla chips.

Notes

Feel free to adjust the spices and toppings to suit your taste. Store leftovers in airtight containers; refrigerate for up to three days or freeze for longer storage.
