  • 2 cups charred corn Grilled or roasted for flavor.
  • 2 cups diced cooked chicken Can use rotisserie chicken for convenience.
  • 1 cup diced cucumber Fresh for crunch.
Dressing
  • 1/2 cup mayonnaise Creamy base for the dressing.
  • 1 tablespoon lime juice For brightness.
  • Salt and pepper to taste
Garnish
  • Chopped cilantro For garnishing.

Preparation
  1. In a large bowl, toss together the charred corn, diced chicken, and diced cucumber until evenly combined.
  2. In a separate bowl, whisk the mayonnaise and lime juice together until smooth.
  3. Pour the dressing over your salad mixture and stir gently to coat everything evenly.
  4. Season with salt and pepper to taste, giving it a little taste test to adjust if necessary.
  5. Garnish with a sprinkle of chopped cilantro and serve right away or chill for a bit to let the flavors meld.

Notes

Storage: Store leftovers in an airtight container in the fridge for 2-3 days. Best enjoyed fresh within a day. Not suitable for freezing.
