Ingredients
  

For the tart shells
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons cold water
For the custard
  • 2 cups milk Consider using a non-dairy alternative.
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
For the topping
  • 1 cup fresh strawberries, sliced Slice just before serving to prevent sogginess.

Method
 

Preparation of Tart Shells
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, softened butter, sugar, and salt. Mix until crumbly.
  3. Add the egg yolk and cold water to form a dough. Press the dough into tart pans.
  4. Bake for about 15 minutes, or until lightly golden.
Making the Custard
  1. Heat the milk in a saucepan over medium heat.
  2. In a bowl, whisk together the sugar, cornstarch, and egg yolks.
  3. Gradually pour the hot milk into this mixture, whisking continuously to prevent curdling.
  4. Return the mixture to the saucepan and cook, stirring until it thickens — about 5-7 minutes.
  5. Stir in the butter and vanilla extract until melted and smooth.
Assembly
  1. Pour the custard into the cooled tart shells and smooth the tops.
  2. Allow them to cool completely before topping with fresh strawberry slices.

Notes

Chill dough for a flaky crust. Ensure egg yolks are added when the mixture is not too hot to prevent scrambling. Use ripe strawberries for best flavor.
