Preparation of Tart Shells
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, softened butter, sugar, and salt. Mix until crumbly.
- Add the egg yolk and cold water to form a dough. Press the dough into tart pans.
- Bake for about 15 minutes, or until lightly golden.
Making the Custard
- Heat the milk in a saucepan over medium heat.
- In a bowl, whisk together the sugar, cornstarch, and egg yolks.
- Gradually pour the hot milk into this mixture, whisking continuously to prevent curdling.
- Return the mixture to the saucepan and cook, stirring until it thickens — about 5-7 minutes.
- Stir in the butter and vanilla extract until melted and smooth.
Assembly
- Pour the custard into the cooled tart shells and smooth the tops.
- Allow them to cool completely before topping with fresh strawberry slices.
Notes
Chill dough for a flaky crust. Ensure egg yolks are added when the mixture is not too hot to prevent scrambling. Use ripe strawberries for best flavor.
