Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine the sliced strawberries with the granulated sugar, cornstarch, and lemon juice. Let the mixture sit.
  3. In a separate bowl, whisk together the flour, oats, baking powder, and salt.
  4. In another bowl, cream the softened butter with the brown sugar until light and fluffy.
  5. Gradually incorporate the dry ingredients into the creamy butter mixture until crumbly.
  6. Press half of the crumb mixture into the bottom of the prepared pan.
  7. Evenly spread the strawberry mixture over the crumb base.
  8. Sprinkle the remaining crumb mixture over the strawberries.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown and the edges are bubbling.
  2. Allow the bars to cool completely before cutting into squares.

Notes

These bars can be enjoyed warm or at room temperature. Pair with vanilla ice cream or whipped cream for extra indulgence. They store well in an airtight container at room temperature for up to three days or can be frozen for up to three months.
