Preparation
- In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
- In another bowl, whip the heavy cream with the vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- In a rectangular dish, layer Graham crackers in a single layer at the bottom.
- Spread half of the cream cheese mixture over the crackers, followed by a layer of sliced strawberries.
- Repeat the layers, finishing with the remaining cream cheese mixture on top.
- Cover and refrigerate for at least 4 hours, preferably overnight.
Serving
- Serve chilled, garnished with extra strawberries if desired.
Notes
This icebox cake pairs well with a drizzle of chocolate sauce or a scoop of vanilla ice cream. Store leftovers covered in the fridge; it will keep well for up to 3 days.
