Ingredients
  

Cream Cheese Mixture
  • 8 oz cream cheese, softened Make sure it's truly softened for easy mixing.
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream Whip to stiff peaks before folding in.
  • 1 tsp vanilla extract
Layers
  • 1 lb fresh strawberries, sliced Can substitute with raspberries or blueberries.
  • 1 package Graham crackers Use to create layers in the dish.

Method
 

Preparation
  1. In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
  2. In another bowl, whip the heavy cream with the vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. In a rectangular dish, layer Graham crackers in a single layer at the bottom.
  5. Spread half of the cream cheese mixture over the crackers, followed by a layer of sliced strawberries.
  6. Repeat the layers, finishing with the remaining cream cheese mixture on top.
  7. Cover and refrigerate for at least 4 hours, preferably overnight.
Serving
  1. Serve chilled, garnished with extra strawberries if desired.

Notes

This icebox cake pairs well with a drizzle of chocolate sauce or a scoop of vanilla ice cream. Store leftovers covered in the fridge; it will keep well for up to 3 days.
