  • 1 lb chicken breast, sliced Can substitute with tofu or shrimp
  • 2 cups broccoli florets
  • 8 oz noodles (your choice; rice noodles preferred)
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp chili paste Adjust according to heat preference
  • 2 tbsp olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Cook the noodles according to package instructions. Drain and set aside, keeping them a little al dente.
  2. In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Add in the minced garlic and sauté until fragrant, about 1 minute.
Cooking
  1. Add the sliced chicken to the skillet and cook until golden brown and no longer pink in the center, about 5-7 minutes.
  2. Toss in the broccoli florets and stir-fry for 3-4 minutes until bright and tender-crisp.
  3. Stir in the soy sauce and chili paste, blending well.
  4. Add the cooked noodles back into the skillet and toss everything together.
  5. Season with salt and pepper to taste and serve hot.

Notes

Garnish with sesame seeds and chopped green onions for extra flavor. Pair with cucumber salad or steamed dumplings for a complete meal.
