Method
Make the Tortilla Dough
- In a large bowl, combine the sourdough discard, olive oil, and water. Stir until smooth.
- Gradually add the flour and salt, mixing until a soft dough forms. Knead gently for about 1 to 2 minutes until there are no dry spots.
- Cover the bowl with a damp towel and let it rest at room temperature for 30 minutes.
Prepare the Burger Sauce
- In a small bowl, whisk together the mayonnaise, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, honey, Worcestershire-style sauce, and black pepper.
- Cover and refrigerate until ready to use.
Cook the Tortillas
- Heat a large skillet over medium-high heat.
- Divide the rested dough into 10 equal pieces, rolling each into a thin circle.
- Cook each tortilla in the dry skillet for about 1 minute per side, until golden. Keep warm.
Prepare the Beef
- Separate the ground beef into 4 equal portions. Roll gently into balls and season with salt and black pepper.
Smash and Cook
- Heat a heavy skillet over high heat until very hot.
- Place a beef ball in the pan and lay a tortilla on top, pressing down with a spatula to flatten. Cook for about 3 minutes until browned.
Flip and Melt the Cheese
- Flip the taco so the beef side is facing up. Sprinkle shredded cheddar, cover, and cook for 1 to 2 minutes until cheese melts.
Assemble and Serve
- Transfer to a plate, top with shredded cabbage, sliced pickles, and drizzle with burger sauce. Serve immediately.
Notes
For a lighter option, experiment with ground turkey or plant-based alternatives. Enjoy with tortilla chips, guacamole, or salsa on the side.
