A crispy, cheesy twist on taco night that combines sourdough tortillas with juicy burger patties and sharp cheddar.

Ingredients
  

For the Sourdough Tortillas
  • 1/2 cup sourdough discard
  • 1/4 cup olive oil
  • 1/3 cup water
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon salt
For the Creamy Burger Sauce
  • 1/2 cup mayonnaise
  • 3/4 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Dijon-style mustard
  • 2 tablespoons finely minced pickles
  • 1 tablespoon pickle brine
  • 1 teaspoon honey
  • 1/4 teaspoon Worcestershire-style sauce
  • pinch black pepper
For the Burger Tacos
  • 1 pound ground beef
  • to taste salt and black pepper
  • 4 pieces sourdough tortillas
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 1/2 cups finely shredded cabbage
  • sliced pickles
  • prepared burger sauce

Method
 

Make the Tortilla Dough
  1. In a large bowl, combine the sourdough discard, olive oil, and water. Stir until smooth.
  2. Gradually add the flour and salt, mixing until a soft dough forms. Knead gently for about 1 to 2 minutes until there are no dry spots.
  3. Cover the bowl with a damp towel and let it rest at room temperature for 30 minutes.
Prepare the Burger Sauce
  1. In a small bowl, whisk together the mayonnaise, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, honey, Worcestershire-style sauce, and black pepper.
  2. Cover and refrigerate until ready to use.
Cook the Tortillas
  1. Heat a large skillet over medium-high heat.
  2. Divide the rested dough into 10 equal pieces, rolling each into a thin circle.
  3. Cook each tortilla in the dry skillet for about 1 minute per side, until golden. Keep warm.
Prepare the Beef
  1. Separate the ground beef into 4 equal portions. Roll gently into balls and season with salt and black pepper.
Smash and Cook
  1. Heat a heavy skillet over high heat until very hot.
  2. Place a beef ball in the pan and lay a tortilla on top, pressing down with a spatula to flatten. Cook for about 3 minutes until browned.
Flip and Melt the Cheese
  1. Flip the taco so the beef side is facing up. Sprinkle shredded cheddar, cover, and cook for 1 to 2 minutes until cheese melts.
Assemble and Serve
  1. Transfer to a plate, top with shredded cabbage, sliced pickles, and drizzle with burger sauce. Serve immediately.

Notes

For a lighter option, experiment with ground turkey or plant-based alternatives. Enjoy with tortilla chips, guacamole, or salsa on the side.
