Preparation
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into rounds about ½ inch thick.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until coated evenly.
- Spread the rounds in a single layer on a baking sheet lined with parchment paper.
Cooking
- Roast in the oven for about 25-30 minutes, flipping halfway, until they’re golden and tender.
- Remove the sweet potatoes from the oven, and drizzle honey over them while they’re still warm.
- Sprinkle feta cheese on top, allowing it to soften slightly, and finish with chopped parsley before serving.

Serve these sweet potato rounds on a platter, pair with a salad or grilled chicken, or enjoy as part of a cheese board. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven for best results.
