Sweet Potato Rounds
  • 2 large Sweet Potatoes
Seasoning and Oil
  • 2 tablespoons Olive Oil Extra virgin recommended
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Omit if preferred
Toppings
  • 1 cup Feta Cheese Goat cheese can be substituted
  • 2 tablespoons Honey Maple syrup can be used
  • 2 tablespoons Parsley Freshly chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds about ½ inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until coated evenly.
  4. Spread the rounds in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast in the oven for about 25-30 minutes, flipping halfway, until they’re golden and tender.
  2. Remove the sweet potatoes from the oven, and drizzle honey over them while they’re still warm.
  3. Sprinkle feta cheese on top, allowing it to soften slightly, and finish with chopped parsley before serving.

Notes

Serve these sweet potato rounds on a platter, pair with a salad or grilled chicken, or enjoy as part of a cheese board. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven for best results.
