Ingredients
  

For the Bars
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup granulated sugar Can substitute with coconut sugar for lower glycemic option.
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup lemon juice Freshly squeezed is recommended.
  • 1 teaspoon lemon zest Adds extra flavor.
  • 1 cup fresh raspberries Fresh is best.
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Use fresh for the best flavor.
  • 1 tablespoon milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine the melted butter, sugar, and eggs. Beat until smooth and creamy.
  3. Stir in the flour, lemon juice, and lemon zest. Mix just until combined to avoid tough bars.
  4. Gently fold in the raspberries, being careful not to break them.
Baking
  1. Pour the mixture into the prepared dish and spread evenly.
  2. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  3. Set the bars aside to cool completely before glazing.
Glazing
  1. In a small bowl, whisk together the powdered sugar, lemon juice, and milk until smooth.
  2. Drizzle the glaze over the cooled bars and let it set before cutting into squares.

Notes

For best flavor, serve chilled. Garnish with extra raspberries or whipped cream. Store in an airtight container for up to a week, or freeze for up to three months.
