Ingredients
  

For the Pumpkin Custard
  • 1 cup pumpkin puree (canned or fresh)
  • 4 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg Feel free to add a pinch for more flavor.
For Cooking
  • 8 slices bread (thicker slices work best) Your choice of bread.
  • Butter for cooking Just enough to coat the skillet.
  • Maple syrup or your favorite toppings Consider whipped cream, fresh fruit, or chopped nuts.

Preparation
  1. In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, cinnamon, and nutmeg until smooth.
  2. Preheat your skillet or griddle over medium heat, adding a little butter—just enough to coat.
  3. Dip each slice of bread into the pumpkin mixture, giving it a good soak on both sides (but not too long—it’ll get soggy!).
Cooking
  1. Place the soaked bread onto the hot skillet and cook for about 3-4 minutes on each side, or until beautifully golden brown.
  2. Serve warm, topped with maple syrup or whatever your heart desires!

Notes

Stale bread works great for this recipe. Double the recipe for larger gatherings. Experiment with different spices and toppings.
