  • 2 pieces ripe peaches, sliced Nectarines can be a substitute.
  • 8 oz burrata cheese Fresh mozzarella can be used if burrata is unavailable.
  • 4 cups arugula Fresh and peppery.
  • 1/2 cup sliced or chopped almonds Toasted almonds enhance nuttiness.
  • 1/4 cup balsamic glaze Generously drizzle for flavor.
  • Salt and pepper to taste Adds seasoning.
  • Olive oil (optional) For added richness.

Method
 

Preparation
  1. In a large serving bowl, layer the arugula to create a fresh base.
  2. Neatly arrange the sliced peaches and dollops of burrata on top of the arugula.
  3. Sprinkle the sliced almonds generously over the salad for added crunch.
  4. Drizzle with balsamic glaze, and add olive oil if desired.
  5. Finish by seasoning with salt and pepper to taste.
  6. Serve immediately, perhaps sharing it at a table filled with laughter.

Notes

This salad is best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to a day but expect the arugula to wilt. Freezing is not recommended.
