  • 2 cups old-fashioned oats Make sure to use old-fashioned oats for the best texture.
  • 1.5 cups milk or almond milk Can be substituted for a dairy-free option.
  • 1 large apple, diced Honeycrisp or Fuji for sweetness, Granny Smith for tartness.
  • 2 large eggs
  • 0.25 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cup chopped walnuts or pecans, optional Can substitute with any other preferred nuts.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract until smooth.
  3. Stir in the oats, baking powder, cinnamon, and salt until well combined.
  4. Gently fold in the diced apple and chopped walnuts or pecans, if using.
Baking
  1. Pour the mixture into the greased baking dish and spread it out evenly.
  2. Bake for 30-35 minutes or until the top is golden brown and the center feels set.
  3. Allow it to cool for about 5 minutes before cutting.

Notes

Can be served warm or refrigerated for quick breakfasts. Store in an airtight container in the fridge for up to 4 days; freeze individual portions for up to 3 months.
