Ingredients
  

Main Ingredients
  • 1 block firm tofu, cubed Press to remove excess moisture for crispiness.
  • 2 cups mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon oil (vegetable or sesame) For cooking.
  • to taste Salt and pepper
  • optional Additional vegetables (bell peppers, broccoli, carrots, etc.) Use whatever veggies you have on hand.

Method
 

Preparation
  1. Press the tofu to remove excess moisture and cut it into cubes.
  2. Heat the oil in a pan or wok over medium-high heat.
Cooking
  1. Add the tofu and let it cook undisturbed for about 5-7 minutes, until it’s golden brown and crispy on all sides.
  2. Once crispy, remove the tofu from the pan and set it aside.
  3. Toss in the mushrooms and any optional vegetables. Stir-fry until tender, about 3-5 minutes.
  4. Introduce the minced garlic and ginger, stirring for about a minute until fragrant.
  5. Return the crispy tofu to the pan and add the soy sauce. Stir to combine and allow to heat through for a couple of minutes.
  6. Season with salt and pepper to taste before serving hot.

Notes

To serve, ladle over jasmine rice or toss with noodles. Garnish with sesame seeds or chopped green onions for added flavor.
