  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 piece red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese.
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste Adjust based on preference.
  • Taco shells or tortillas Warm according to package instructions.

Preparation
  1. In a large bowl, combine the shredded chicken, halved cherry tomatoes, diced cucumbers, thinly sliced red onion, chopped parsley, and crumbled feta.
  2. Drizzle in the olive oil and lemon juice, then add salt and pepper to taste. Toss gently to combine.
  3. Warm the taco shells or tortillas according to package instructions.
  4. Fill each taco shell or tortilla generously with the chicken mixture.
  5. Serve immediately for the best flavor.

Notes

Make shredded chicken ahead of time and store for quick meals. For a twist, use lettuce wraps instead of taco shells.
