Cooking the Skillet
- In a skillet, heat the olive oil over medium heat.
- Add the diced onion, sautéing it until it turns translucent, about 4-5 minutes.
- Stir in the minced garlic and let it cook for an additional minute.
- Toss in the white beans and fresh spinach, and cook until the spinach wilts, around 2-3 minutes.
- Season with salt and pepper to your taste.
- Serve warm, with crusty bread on the side or spooned over a bed of fluffy rice.
Notes
For extra flavor, consider adding a squeeze of lemon before serving, or sprinkle grated Parmesan or feta cheese on top.
