  • 4 cups fresh spinach Frozen spinach can be used if thawed and drained.
  • 1 medium onion, diced Diced uniformly for even cooking.
  • 2 cloves garlic, minced Provides a fragrant base for the dish.
  • 2 tablespoons olive oil Used for sautéing the vegetables.
  • to taste salt and pepper Adjust seasoning according to preference.
  • optional crusty bread or rice for serving Choose crusty bread or serve over rice.

Method
 

Cooking the Skillet
  1. In a skillet, heat the olive oil over medium heat.
  2. Add the diced onion, sautéing it until it turns translucent, about 4-5 minutes.
  3. Stir in the minced garlic and let it cook for an additional minute.
  4. Toss in the white beans and fresh spinach, and cook until the spinach wilts, around 2-3 minutes.
  5. Season with salt and pepper to your taste.
  6. Serve warm, with crusty bread on the side or spooned over a bed of fluffy rice.

Notes

For extra flavor, consider adding a squeeze of lemon before serving, or sprinkle grated Parmesan or feta cheese on top.
