- In a bowl, combine the sliced strawberries with sugar. Let it sit for about 10 minutes to release their juices.
- If using gelatin, dissolve it in warm water and set aside.
- In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Gently fold the strawberry mixture into the whipped cream. If you opted for gelatin, add it now.
- Spoon the mixture into serving dishes and chill in the refrigerator for at least 2 hours before serving.
- When ready to serve, garnish each mousse with fresh strawberry slices.
Notes
Store leftovers in airtight containers in the refrigerator for 2-3 days. For best taste, consume fresh. Freeze before adding fresh strawberries on top, and allow it to come back to room temperature in the fridge before serving.
