Ingredients
  

For the mousse
  • 2 cups fresh strawberries, hulled and sliced Choose ripe strawberries for maximum flavor.
  • 1/4 cup sugar Helps to sweeten and release juices from the strawberries.
  • 1 cup heavy whipping cream Ensure it's well chilled for optimal whipping.
  • 1 teaspoon vanilla extract Adds flavor to the whipped cream.
  • 1/2 teaspoon gelatin (optional, for added stability) Dissolve in warm water if using.
  • 1 tablespoon water Used to dissolve gelatin if added.

Method
 

Preparation
  1. In a bowl, combine the sliced strawberries with sugar. Let it sit for about 10 minutes to release their juices.
  2. If using gelatin, dissolve it in warm water and set aside.
  3. In another bowl, whip the heavy cream with vanilla extract until soft peaks form.
  4. Gently fold the strawberry mixture into the whipped cream. If you opted for gelatin, add it now.
  5. Spoon the mixture into serving dishes and chill in the refrigerator for at least 2 hours before serving.
  6. When ready to serve, garnish each mousse with fresh strawberry slices.

Notes

Store leftovers in airtight containers in the refrigerator for 2-3 days. For best taste, consume fresh. Freeze before adding fresh strawberries on top, and allow it to come back to room temperature in the fridge before serving.
