Preparation
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well blended and press firmly into the bottom of the prepared pan.
Making the Filling
- In another bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and mix until well combined.
- Add the eggs, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until smooth.
Baking
- Pour the creamy filling over the crust and spread evenly.
- Bake for about 25–30 minutes, until the edges are set and the center has a slight jiggle.
- Allow to cool at room temperature, then transfer to the refrigerator and chill for at least 2 hours.
- Cut into bars, serve chilled, and enjoy.
Notes
Try garnishing with fresh berries or powdered sugar. For additional flavor, consider adding lavender or rosemary on top.
