Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the filling
  • 8 oz cream cheese, softened Make sure it's at room temperature for smooth mixing.
  • 1 cup powdered sugar
  • 2 large eggs Can substitute with flax eggs or applesauce for egg-free option.
  • 1/4 cup lemon juice Fresh lemon juice is recommended.
  • 1 tablespoon lemon zest Do not skip for added flavor.
  • 1/2 teaspoon vanilla extract
  • pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well blended and press firmly into the bottom of the prepared pan.
Making the Filling
  1. In another bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and mix until well combined.
  2. Add the eggs, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until smooth.
Baking
  1. Pour the creamy filling over the crust and spread evenly.
  2. Bake for about 25–30 minutes, until the edges are set and the center has a slight jiggle.
  3. Allow to cool at room temperature, then transfer to the refrigerator and chill for at least 2 hours.
  4. Cut into bars, serve chilled, and enjoy.

Notes

Try garnishing with fresh berries or powdered sugar. For additional flavor, consider adding lavender or rosemary on top.
