Ingredients
  

For the crust
  • 1 cup unsalted butter, softened Use softened butter for better mixing.
  • 1 cup granulated sugar For crust.
  • 2 cups all-purpose flour Essential for the base.

For the filling
  • 4 large eggs Fresh eggs work best.
  • 1 cup granulated sugar For filling.
  • 1/2 cup fresh lemon juice Preferably freshly squeezed.
  • 1 teaspoon lemon zest Adds extra flavor.
  • Powdered sugar for dusting For serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. In a mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  3. Stir in the flour and salt until it forms a soft dough.
  4. Press the crust mixture evenly into the bottom of your prepared pan and bake for 15 minutes or until lightly golden.
Filling
  1. While the crust is baking, whisk together the eggs, the remaining 1 cup of sugar, fresh lemon juice, and lemon zest in another bowl until smooth.
  2. Once the crust is ready, carefully pour the lemon filling over it.
  3. Return to the oven and bake for an additional 20-25 minutes, or until set.
  4. Let them cool completely before dusting with powdered sugar and cutting into bars.

Notes

For a twist, you can use grapefruit or lime juice instead of lemon juice. Serve with vanilla ice cream or fresh berries for a delightful experience.
