Preparation
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- In a mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Stir in the flour and salt until it forms a soft dough.
- Press the crust mixture evenly into the bottom of your prepared pan and bake for 15 minutes or until lightly golden.
Filling
- While the crust is baking, whisk together the eggs, the remaining 1 cup of sugar, fresh lemon juice, and lemon zest in another bowl until smooth.
- Once the crust is ready, carefully pour the lemon filling over it.
- Return to the oven and bake for an additional 20-25 minutes, or until set.
- Let them cool completely before dusting with powdered sugar and cutting into bars.
Notes
For a twist, you can use grapefruit or lime juice instead of lemon juice. Serve with vanilla ice cream or fresh berries for a delightful experience.
