  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar for the crust
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
For the filling
  • 4 large eggs
  • 1 cup granulated sugar for the filling
  • 1/2 cup freshly squeezed lemon juice about 2-3 lemons
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
For serving
  • Powdered sugar for dusting
  • Fresh berries for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and 1 cup of sugar until smooth.
  3. Gradually fold in the flour and salt until well combined.
  4. Press the mixture into the bottom of a greased 9x13 inch baking pan.
  5. Bake for 15-20 minutes until just golden around the edges.
Making the Filling
  1. While the crust cools slightly, whisk together the eggs, 1 cup of sugar, lemon juice, lemon zest, and baking powder in another bowl until frothy.
  2. Pour the lemon filling over the baked crust.
  3. Return to the oven and bake for an additional 20-25 minutes until the filling is set.
Final Steps
  1. Allow the lemon bars to cool completely before dusting with powdered sugar and topping with fresh berries.
  2. Cut into squares and serve.
