Preparation
- Preheat your oven to 375°F (190°C) while you prep the filling.
- In a medium pan, sauté the finely chopped onion over medium heat for about 5 minutes until it’s softened and fragrant.
- In a large bowl, combine your room-temperature cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, pepper, and half of the shredded cheddar cheese. Mix until everything is well incorporated.
- Pour the mixture into a greased baking dish and sprinkle the remaining cheddar cheese over the top.
- Bake in the preheated oven for approximately 30-35 minutes, or until the quiche is set and golden brown on top.
- After baking, allow it to cool slightly before slicing. Serve warm or at room temperature.
Notes
This quiche is versatile and can be paired with a fresh salad or ripe tomatoes. Leftovers can be stored in the fridge for 3 to 4 days or frozen for up to 2 months. Allow leftovers to cool before storing.
