  • 6 medium apples, peeled and thinly sliced Feel free to use any apples you have on hand—Granny Smiths for tartness, or Fujis for sweetness.
  • 4 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk Can substitute with almond or oat milk for a dairy-free option.
  • 2 tablespoons butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and generously grease a round cake pan.
  2. In a large bowl, whisk together the eggs, sugar, and vanilla extract until it’s light and frothy.
  3. In another bowl, combine the flour, baking powder, and salt. Gradually add this to the egg mix, alternating with the milk. Mix until just combined—overmixing can lead to a tough cake!
  4. Gently fold in the melted butter.
  5. Carefully layer the sliced apples into the batter, ensuring you distribute them uniformly throughout.
  6. Pour the batter into the prepared cake pan and spread it evenly with a spatula.
Baking
  1. Bake in your preheated oven for 45-50 minutes or until the top turns golden and a toothpick comes out clean when inserted.
  2. Allow the cake to cool before serving.

Notes

A dusting of powdered sugar over the top adds a lovely touch. Best served with a dollop of fresh whipped cream or a scoop of vanilla ice cream.
