Preparation
- Preheat your oven to 350°F (175°C) and generously grease a round cake pan.
- In a large bowl, whisk together the eggs, sugar, and vanilla extract until it’s light and frothy.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this to the egg mix, alternating with the milk. Mix until just combined—overmixing can lead to a tough cake!
- Gently fold in the melted butter.
- Carefully layer the sliced apples into the batter, ensuring you distribute them uniformly throughout.
- Pour the batter into the prepared cake pan and spread it evenly with a spatula.
Baking
- Bake in your preheated oven for 45-50 minutes or until the top turns golden and a toothpick comes out clean when inserted.
- Allow the cake to cool before serving.
Notes
A dusting of powdered sugar over the top adds a lovely touch. Best served with a dollop of fresh whipped cream or a scoop of vanilla ice cream.
