  • 1 cup cooked rice Use your preferred type of rice

Method
 

Marinating the Chicken
  1. Mix the honey and lime juice in a bowl until well combined to create a marinade.
  2. Immerse the chicken breasts in this mixture and let soak for at least 15 minutes.
Grilling the Chicken
  1. Preheat your grill to medium heat.
  2. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and beautifully charred.
Preparing Avocado Rice
  1. Mash the avocado in a bowl and fold in the cooked rice, olive oil, salt, and pepper.
Serving
  1. Once the chicken is perfectly cooked, slice it into strips and serve it over the avocado rice.
  2. Sprinkle fresh cilantro on top if desired.

Notes

For richer flavor, marinate chicken for a couple of hours. Use a grill pan or outdoor grill for better char. Adjust honey and lime ratio to taste.
