Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup honey BBQ sauce (store-bought or homemade)
For the Potatoes
  • 2 pounds potatoes, diced
  • 1/4 cup grated Parmesan cheese Can be swapped for cheddar or a dairy-free alternative.
  • 2 tablespoons garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • optional Chopped parsley for garnish

Preparation
  1. Preheat your grill or oven to medium-high heat.
  2. Generously coat the chicken breasts with the honey BBQ sauce.
  3. Grill or bake the chicken for 20 to 25 minutes, turning them halfway through for even cooking.
Cooking the Potatoes
  1. Bring a pot of salted water to a boil, then add the diced potatoes.
  2. Cook until tender, roughly 10 to 15 minutes.
  3. Once tender, drain the potatoes and return them to the pot.
  4. Toss in the olive oil, minced garlic, grated Parmesan, salt, and pepper until well combined.
Serving
  1. Serve the juicy chicken alongside the garlic Parmesan potatoes, and sprinkle with chopped parsley for an extra pop of color, if desired.

Notes

For an extra flavor boost, marinate the chicken in honey BBQ sauce for a couple of hours before cooking. Feel free to add a splash of lemon juice to the potatoes for brightness. A quick broil for the last few minutes on the chicken can enhance its flavor and texture.
