- In a mixing bowl, combine the cottage cheese, cocoa powder, sugar, egg, baking powder, and pinch of salt. Stir until the mixture is nice and smooth.
- Pour half of this mixture into a microwave-safe mug or bowl.
- Sprinkle chocolate chips into the center and cover them with the remaining batter.
- Microwave for 1-2 minutes, keeping an eye on it as it cooks; the cake should rise nicely, and the center should remain soft and gooey.
- Allow it to cool for a minute before indulging in your creation.
Notes
Garnish with powdered sugar or whipped cream, and serve with fresh berries or vanilla ice cream. Store in an airtight container in the fridge for 2-3 days or freeze for later enjoyment.
