Ingredients
  

For the beef tenderloin
  • 1 piece beef tenderloin (2-3 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
For the sauce
  • 2 cups beef stock
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour (optional, for thickening)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the olive oil, rosemary, thyme, garlic, salt, and pepper. Mix well.
  3. Rub this mixture generously all over the beef tenderloin, ensuring it’s well coated.
Roasting
  1. Place the tenderloin on a roasting pan and roast for about 25-30 minutes, or until it reaches your preferred level of doneness.
  2. Once it’s cooked, remove the beef from the oven and let it rest, covered loosely with foil.
Sauce-Making
  1. While the meat is resting, pour the beef stock into the roasting pan over medium heat, scraping up the browned bits.
  2. If a thicker sauce is desired, whisk in the flour and let it cook for a minute before stirring in the butter until melted.
Serving
  1. Slice the beef tenderloin and drizzle with the savory pan sauce before serving.
  2. Garnish with fresh herbs and serve with sides like mashed potatoes or a bright salad.
