Ingredients
  

Main ingredients
  • 1 lb Juicy shrimp (peeled and deveined)
  • 1 large Crisp cucumber Diced into bite-sized pieces
  • 2 stalks Fresh green onion Thinly sliced
  • 1 cup Fresh herbs (like parsley and cilantro) Chopped
  • 1/2 cup Creamy lime dressing Homemade is best, but store-bought works too
  • to taste Salt and pepper

Method
 

Cooking the Shrimp
  1. Bring a pot of water to a boil.
  2. Add shrimp and cook until pink and opaque, about 2-3 minutes.
  3. Drain and let shrimp cool.
Preparing the Salad
  1. Chop cucumber into bite-sized pieces and slice green onions thinly.
  2. In a large bowl, combine shrimp, cucumber, green onion, and chopped herbs.
  3. Drizzle with creamy lime dressing and season with salt and pepper.
  4. Toss everything gently to coat.
  5. Chill the salad for about 10-15 minutes to meld flavors.

Notes

Serve chilled or artfully plate on a bed of mixed greens. Optional toppings include avocado slices or use as a filling for lettuce wraps. Store leftovers in an airtight container for up to two days, but avoid freezing.
