- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the oats, diced apples, cinnamon, nutmeg, baking powder, and salt. Mix well.
- In a separate bowl, whisk together the almond milk, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined.
- Transfer the mixture into a greased baking dish, spreading it out evenly.
- Bake for 30-35 minutes or until the top is golden and the oatmeal has set.
- Let it cool for a few minutes before serving.
Notes
Serve the oatmeal warm with drizzled honey or maple syrup. Add chopped nuts or yogurt for extra texture. Store in the fridge for about five days or freeze for up to three months. Reheat with a splash of almond milk.
