  • 2 large potatoes Yukon Gold or Russet potatoes preferred
  • 1 pound ground lamb Can substitute with ground beef or chicken
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs Use a mix of parsley, mint, or cilantro
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 egg, beaten For binding
  • Oil, for frying

Method
 

Preparation
  1. Start by placing the potatoes in a pot of salted water. Boil until tender, then drain and mash. Set aside.
  2. In a pan, heat a splash of oil over medium heat. Add the finely chopped onions and cook until they turn translucent.
  3. Toss in the minced garlic and stir for another minute.
  4. Introduce the ground lamb to the skillet, seasoning it with cumin, paprika, salt, and pepper. Sauté until the lamb is beautifully browned.
  5. Stir in the chopped herbs and remove from heat, allowing the mixture to cool slightly.
  6. In a large bowl, mix the mashed potatoes with the lamb mixture, binding everything together with the beaten egg.
  7. With your hands, shape the mixture into patties.
Cooking
  1. Heat some oil in a clean pan over medium heat. Gently place the patties in and fry them until they are golden brown on both sides.
  2. Serve them hot, perhaps with a yogurt sauce or some fresh veggies on the side.

These patties are versatile; you can adjust the herbs based on availability. For a healthier option, consider baking them instead of frying.
