Preparation
- In a bowl, mix 2 tablespoons of olive oil, 2 tablespoons of lime juice, ground cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Add in the chicken breasts and toss well to ensure they’re fully coated. Let them marinate for at least 15 minutes.
- Fire up your grill to medium-high heat and lightly oil the grill grate to prevent sticking.
Cooking
- Place the marinated chicken on the grill. Cook for about 6 to 7 minutes on each side or until the chicken is thoroughly cooked through.
- While the chicken is grilling, combine the diced avocados, tomato, red onion, cilantro, 1 tablespoon of olive oil, and 1 tablespoon of lime juice in a separate bowl. Gently toss everything together.
- Once the chicken is done, transfer it to a plate and let it rest for 5 minutes.
Serving
- Top your grilled chicken with the avocado salsa and serve.
Notes
Serve with cilantro-lime rice or in warm tortillas for wraps. Store leftovers in an airtight container in the fridge for up to three days.
