Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil for marinating
  • 2 tablespoons lime juice for marinating
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Avocado Salsa
  • 2 pieces California avocados peeled and diced
  • 1 piece tomato diced
  • 1/4 cup red onion finely chopped
  • 2 tablespoons cilantro chopped
  • 1 tablespoon olive oil for salsa
  • 1 tablespoon lime juice for salsa

Method

Preparation
  1. In a bowl, mix 2 tablespoons of olive oil, 2 tablespoons of lime juice, ground cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Add in the chicken breasts and toss well to ensure they’re fully coated. Let them marinate for at least 15 minutes.
  2. Fire up your grill to medium-high heat and lightly oil the grill grate to prevent sticking.
Cooking
  1. Place the marinated chicken on the grill. Cook for about 6 to 7 minutes on each side or until the chicken is thoroughly cooked through.
  2. While the chicken is grilling, combine the diced avocados, tomato, red onion, cilantro, 1 tablespoon of olive oil, and 1 tablespoon of lime juice in a separate bowl. Gently toss everything together.
  3. Once the chicken is done, transfer it to a plate and let it rest for 5 minutes.
Serving
  1. Top your grilled chicken with the avocado salsa and serve.
