Preparation
- Slice your cucumbers and tomatoes. Place them in a large bowl.
- Add your olives and crumble the feta cheese over the top.
- In a separate bowl, whisk together fresh lemon juice, olive oil, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the salad mixture and toss gently to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Best served fresh, but keeps well in the refrigerator for 2-3 days when stored in an airtight container.
