Ingredients
  

Main Ingredients
  • 2 medium Cucumbers Sliced
  • 2 medium Tomatoes Sliced
  • 1 cup Olives (Kalamata or green) Your choice, pitted
  • 1 cup Feta cheese Crumbled
Vinaigrette Ingredients
  • 2 tablespoons Lemon juice Freshly squeezed
  • 3 tablespoons Olive oil Extra virgin recommended
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
Optional Ingredients
  • 1 handful Parsley or mint Chopped, for added flavor

Method
 

Preparation
  1. Slice your cucumbers and tomatoes. Place them in a large bowl.
  2. Add your olives and crumble the feta cheese over the top.
  3. In a separate bowl, whisk together fresh lemon juice, olive oil, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad mixture and toss gently to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Best served fresh, but keeps well in the refrigerator for 2-3 days when stored in an airtight container.
