Method

Preparation
  1. In a bowl, combine 3 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, paprika, salt, and pepper.
  2. Add the cubed chicken to the marinade, tossing until well coated. Let it marinate for at least 30 minutes.
  3. After marinating, thread the chicken cubes onto the soaked wooden skewers.
  4. Preheat your grill to medium-high temperature.
Cooking
  1. Place your skewers on the grill, cooking for about 8-10 minutes, turning occasionally.
  2. Ensure the chicken is golden and cooked through.
Making the Feta Dip
  1. Combine crumbled feta, Greek yogurt, 1 tablespoon olive oil, lemon zest, lemon juice, minced garlic, and chopped dill in a blender.
  2. Blend until smooth and creamy, adjusting seasoning as needed.
Assembly
  1. Arrange the skewers on a rustic board alongside bowls of the creamy feta dip.
  2. Add in cherry tomatoes, sliced cucumbers, Kalamata olives, roasted red peppers, and warm pita triangles.
  3. Garnish with fresh herbs and enjoy!

Notes

Marinate chicken longer for deeper flavor. Reheat gently but don't expect it to taste as fresh as grilled.
