- In a bowl, combine 3 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, paprika, salt, and pepper.
- Add the cubed chicken to the marinade, tossing until well coated. Let it marinate for at least 30 minutes.
- After marinating, thread the chicken cubes onto the soaked wooden skewers.
- Preheat your grill to medium-high temperature.
Cooking
- Place your skewers on the grill, cooking for about 8-10 minutes, turning occasionally.
- Ensure the chicken is golden and cooked through.
Making the Feta Dip
- Combine crumbled feta, Greek yogurt, 1 tablespoon olive oil, lemon zest, lemon juice, minced garlic, and chopped dill in a blender.
- Blend until smooth and creamy, adjusting seasoning as needed.
Assembly
- Arrange the skewers on a rustic board alongside bowls of the creamy feta dip.
- Add in cherry tomatoes, sliced cucumbers, Kalamata olives, roasted red peppers, and warm pita triangles.
- Garnish with fresh herbs and enjoy!
Notes
Marinate chicken longer for deeper flavor. Reheat gently but don't expect it to taste as fresh as grilled.
