  • 2 slices slices of bread (sourdough or whole grain) Preferably sourdough for its tanginess.
  • 1 each ripe avocado Ensure it is just ripe for the best texture.
  • 2 each eggs Cook as per your preference: fried, scrambled, or poached.
Drizzle Ingredients
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh herbs (parsley or basil) Feel free to swap herbs based on preference.
  • to taste Salt and pepper To taste.
  • to taste Red pepper flakes Optional for added heat.

Method
 

Preparation
  1. Toast the bread slices until golden brown.
  2. While the bread is toasting, prepare the eggs by frying, scrambling, or poaching them.
  3. In a small bowl, combine olive oil, lemon zest, and chopped herbs to create the drizzle.
  4. Mash the ripe avocado in a bowl, seasoning it with salt and pepper.
  5. Once the toast is ready, spread mashed avocado on each slice.
  6. Top each slice with the cooked egg.
  7. Drizzle the lemon-herb oil generously over the toast.
  8. Sprinkle red pepper flakes on top if desired.

Best served immediately. If leftovers occur, store components separately for freshness.
