  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes Use any tender cut of your choice.
  • 1 medium zucchini, cut into half-moons Can substitute with bell peppers or asparagus.
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • optional Fresh parsley, chopped, for garnish

Method
 

Preparation
  1. Pat the steak bites dry with paper towels to remove moisture.
  2. Season the cubes generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the steak bites in a single layer. Let them sear for 1-2 minutes on each side until beautifully browned. Remove and set aside.
Cooking
  1. In the same skillet, toss in the butter and let it melt.
  2. Add the minced garlic and sauté for about 30 seconds.
  3. Toss in the zucchini and cook until tender-crisp, about 3-5 minutes.
  4. Return the steak to the skillet and toss well to coat in the garlic butter sauce. Cook for another 1-2 minutes.
  5. Garnish with fresh parsley and serve immediately.

Notes

Best served hot! Pair with rice, mashed potatoes, or a garden salad. Keep leftovers in airtight containers for 3 days in the refrigerator or freeze for up to 3 months.
