Preparation
- Pat the steak bites dry with paper towels to remove moisture.
- Season the cubes generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the steak bites in a single layer. Let them sear for 1-2 minutes on each side until beautifully browned. Remove and set aside.
Cooking
- In the same skillet, toss in the butter and let it melt.
- Add the minced garlic and sauté for about 30 seconds.
- Toss in the zucchini and cook until tender-crisp, about 3-5 minutes.
- Return the steak to the skillet and toss well to coat in the garlic butter sauce. Cook for another 1-2 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
Best served hot! Pair with rice, mashed potatoes, or a garden salad. Keep leftovers in airtight containers for 3 days in the refrigerator or freeze for up to 3 months.
