  • 1 lb flank steak
  • 2 cups cooked rice white, brown, or cauliflower rice for a low-carb option
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup fresh veggies bell peppers, cherry tomatoes, or any colorful produce on hand
  • 1/2 cup feta cheese optional, but a delightful addition
Marinade
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice

Method
 

Preparation
  1. Whisk together the olive oil, soy sauce, lime juice, salt, and pepper in a small bowl to create the marinade.
  2. Place the flank steak into the marinade, ensuring it's fully coated. Cover and let it marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
Cooking
  1. Once the grill is hot, place the flank steak on it. Cook for about 5-7 minutes on each side, or until it reaches your desired doneness.
  2. Remove the steak from the grill and let it rest for a few minutes before slicing.
  3. Thinly slice the steak against the grain for maximum tenderness.
Assembly
  1. In bowls, start layering with cooked rice, followed by black beans, corn, fresh veggies, and finished with sliced flank steak.
  2. Sprinkle feta cheese on top if desired, and serve immediately.

Notes

For best flavor, let the flank steak marinate longer—several hours or overnight is recommended. Store leftovers in an airtight container and reheat gently to avoid toughening the meat.
