  • 6 large large eggs
  • cup whole milk
  • ¼ cup half-and-half
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon Dijon mustard (optional)
  • a pinch ground nutmeg (optional)
Mix-Ins
  • 1 ½ cups mix-ins of choice (e.g., grated Gruyère, vegetables) Ideas include: ⅔ cup grated Gruyère cheese, 2 tablespoons chopped fresh chives, cooked crumbled lean beef, chopped sautéed broccoli, caramelized onions, cubed leftover roast beef, or roasted vegetables.

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish generously.
  2. Sauté your chosen vegetables, such as onions or any leftover meats, over medium heat until softened. Set aside.
  3. In a mixing bowl, whisk together the eggs, whole milk, half-and-half, salt, pepper, and optional mustard and nutmeg.
  4. Fold in the sautéed vegetables and any additional mix-ins into the egg mixture.
  5. Pour everything into your prepared pie dish and smooth the top.
Baking
  1. Bake in the preheated oven for 40-55 minutes, until the quiche is set and the top is golden brown.
  2. Let it cool for about 10-15 minutes before slicing and serving.

Notes

This dish pairs beautifully with a fresh green salad or crispy roasted potatoes. It can be served warm or at room temperature, making it a great make-ahead meal. Store leftovers covered in the refrigerator for 3-4 days or freeze for up to 2 months.
