  • 1 pound ground beef Can substitute with ground turkey for a lighter option.
  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth For a richer flavor, consider using beef broth.
  • 1 cup heavy cream Can be omitted if freezing.
  • 1 cup shredded cheddar cheese For a vegan option, try plant-based cheese.
  • to taste salt and pepper
  • 1 teaspoon garlic powder Fresh minced garlic can be used for more flavor.
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat, drain excess fat, and transfer to the crockpot.
  2. Add the diced potatoes, chopped onion, diced carrots, diced celery, chicken broth, garlic powder, and dried thyme to the crockpot. Stir well.
  3. Set your crockpot to low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese. Season with salt and pepper to taste.
  5. Stir everything together, allowing it to heat through before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to three months. Thaw in the fridge overnight and reheat on the stove or microwave until warmed through. Don't rush the simmering time for the best flavor.
