Preparation
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, grated Parmesan, salt, and pepper.
- Dip each asparagus spear in the beaten eggs, letting excess drip off, then coat in the breadcrumb mixture.
Cooking
- Place the coated asparagus in the air fryer basket in a single layer.
- Lightly mist with olive oil.
- Cook in the air fryer for 10-12 minutes or until golden brown and crispy.
- Serve warm and enjoy!
Notes
Serve with a garlicky aioli or lemon dipping sauce for extra flavor. Store leftovers in an airtight container for up to 2 days. Reheat in air fryer for a few minutes. Asparagus does not freeze well.
