Ingredients
  

For the Asparagus Fries
  • 1 bunch asparagus, trimmed Choose thick spears for better coating.
  • 1 cup grated Parmesan cheese Can substitute with other cheeses.
  • 1 cup breadcrumbs Panko breadcrumbs work well for extra crunch.
  • 2 large eggs, beaten For coating the asparagus.
  • to taste Salt and pepper For seasoning.
  • as needed Olive oil spray To help achieve a golden color and crunch.

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, grated Parmesan, salt, and pepper.
  3. Dip each asparagus spear in the beaten eggs, letting excess drip off, then coat in the breadcrumb mixture.
Cooking
  1. Place the coated asparagus in the air fryer basket in a single layer.
  2. Lightly mist with olive oil.
  3. Cook in the air fryer for 10-12 minutes or until golden brown and crispy.
  4. Serve warm and enjoy!

Notes

Serve with a garlicky aioli or lemon dipping sauce for extra flavor. Store leftovers in an airtight container for up to 2 days. Reheat in air fryer for a few minutes. Asparagus does not freeze well.
