Ingredients
  

Vegetables
  • 2 cups corn (fresh or canned)
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • fresh cilantro (optional, for garnish)
Dressing
  • 1/3 cup mayonnaise Greek yogurt can be used as a lighter alternative.
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, toss together the corn, diced cucumber, halved cherry tomatoes, and finely chopped red onion.
  2. In a separate small bowl, whisk the mayonnaise and lime juice together until smooth.
  3. Pour the creamy dressing over the vegetable mix and gently toss to coat everything evenly.
  4. Season the salad with salt and pepper to your liking.
  5. Chill the salad in the refrigerator for at least 30 minutes to meld the flavors.
  6. Before serving, garnish with fresh cilantro if desired and enjoy it cold.

Notes

This salad can be served as a side dish or on its own as a light lunch. It’s best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Do not freeze.
