  • 1 cup cottage cheese A fantastic base for creaminess.
  • 1/2 cup grated Parmesan cheese For rich umami flavor.
  • 2 cloves garlic, minced You can’t have pasta without garlic!
  • 1 cup cherry tomatoes, halved Sweet bursts of flavor. Diced canned tomatoes can be used as a substitute.
  • 1 tablespoon olive oil For sautéing.
  • to taste Salt Always essential.
  • to taste Pepper Always essential.
  • Fresh basil for garnish Adds a lovely aroma and freshness.

Preparation
  1. Cook your pasta according to package instructions, ensuring to salt the water. Once perfectly al dente, drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about a couple of minutes.
  3. Toss in halved cherry tomatoes and cook until softened and releasing juices.
  4. Stir in the cottage cheese and Parmesan, mixing until you have a cream sauce.
  5. Add the cooked pasta to the sauce, ensuring it is thoroughly coated.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with freshly torn basil.

Notes

For added flavor, consider using crushed red pepper flakes when sautéing the garlic. Creative twists include using ricotta instead of cottage cheese or adding sautéed spinach or zucchini.
