Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (rotini or penne) Use any pasta shape you enjoy
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved Or cubed, if preferred
  • 1 cup fresh basil leaves, chopped A true game changer
Dressing
  • 1/2 cup mayonnaise Substitute with Greek yogurt for a tangier flavor
  • 1/4 cup sour cream
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. Once done, drain the pasta and let it cool.
Mixing Ingredients
  1. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and freshly chopped basil.
Preparing the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, balsamic vinegar, salt, and pepper until smooth.
  2. Pour the dressing over the pasta mixture and toss gently until everything is coated.
Chilling and Serving
  1. Pop the completed salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  2. Serve chilled or at room temperature.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Stir before serving and consider adding a splash of balsamic vinegar to refresh the dressing.
