- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese, eggs, garlic powder, salt, and pepper. Stir until everything is well mixed and creamy.
- Chop the onion and sauté it in a pan over medium heat until it becomes golden and fragrant.
- Add the fresh spinach to the pan and let it wilt, stirring occasionally for a couple of minutes.
- Once the spinach has wilted, blend it into the cottage cheese and egg mixture. Gently fold in the cheddar cheese until evenly distributed.
- Pour the combined mixture into a greased pie dish, smoothing out the top.
Cooking
- Bake in the preheated oven for about 30-35 minutes, or until the top is set and lightly golden.
- Remove from the oven and let it cool for a few minutes before slicing into wedges.
Notes
This quiche can be elevated with a fresh green salad, savory roasted tomatoes, a dollop of sour cream, or fresh herbs. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat in the oven for best flavor.
