  • 1 cup Cottage Cheese
  • 2 cups Fresh Spinach Can be substituted with other greens like kale or broccoli.
  • 4 large Eggs
  • 1 medium Onion Chopped.
  • 1 teaspoon Garlic Powder
  • 1 cup Cheddar Cheese Feel free to use your favorite variety.
  • to taste Salt and Pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, eggs, garlic powder, salt, and pepper. Stir until everything is well mixed and creamy.
  3. Chop the onion and sauté it in a pan over medium heat until it becomes golden and fragrant.
  4. Add the fresh spinach to the pan and let it wilt, stirring occasionally for a couple of minutes.
  5. Once the spinach has wilted, blend it into the cottage cheese and egg mixture. Gently fold in the cheddar cheese until evenly distributed.
  6. Pour the combined mixture into a greased pie dish, smoothing out the top.
Cooking
  1. Bake in the preheated oven for about 30-35 minutes, or until the top is set and lightly golden.
  2. Remove from the oven and let it cool for a few minutes before slicing into wedges.

Notes

This quiche can be elevated with a fresh green salad, savory roasted tomatoes, a dollop of sour cream, or fresh herbs. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat in the oven for best flavor.
