  • 2 cups cooked chicken, diced (grilled, roasted, or rotisserie works brilliantly here)
  • 1 cup celery, chopped (for that satisfying crunch)
  • 1 cup bell peppers, diced (any color you fancy!)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped (red for a touch of sweetness)
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons lemon juice (freshly squeezed is best)

Method
 

Preparation
  1. Dice the cooked chicken into bite-sized pieces.
  2. Chop the celery, bell peppers, and red onion.
  3. Halve the cherry tomatoes.
Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper until smooth.
Combine and Toss
  1. In a large mixing bowl, add the chicken and all the chopped veggies.
  2. Pour the dressing over them.
  3. Use a spatula to fold the ingredients together, ensuring every piece is coated with the dressing.
Taste and Chill
  1. Taste and adjust seasoning as needed with lemon juice or salt.
  2. Cover the bowl with plastic wrap and chill in the refrigerator for 15–30 minutes.

Notes

This chicken salad is a versatile dish. You can substitute chicken with turkey or add spices like curry powder. For a lighter version, consider using Greek yogurt instead of mayonnaise.
