  • 3-4 pieces boneless, skinless chicken breasts
  • as needed Lo Mein noodles (fresh or dried)
  • 1 piece red bell pepper chopped
  • 1 piece yellow bell pepper chopped
  • 2 pieces carrots thinly sliced
  • 2 pieces green onions chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Preparation
  1. Begin by gathering all your ingredients. Chop the vegetables into bite-sized pieces, making sure they’re ready to go.
  2. Cook the Lo Mein noodles according to the package instructions until al dente. Drain them and set aside for later.
Cooking
  1. Heat a large skillet or wok over medium-high heat and add a splash of oil. Once hot, toss in the chicken and sauté until it’s golden brown and fully cooked—about 6-8 minutes. Remove the chicken from the skillet and set it aside.
  2. In the same pan, stir-fry the bell peppers, carrots, and green onions for about 3-4 minutes until they are tender yet still crisp.
  3. Return the cooked chicken to the skillet with the vegetables. Add the prepared Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any extra spices you fancy. Toss everything together until it’s well mixed and heated through.
  4. Serve hot! A drizzle of extra soy sauce can add the perfect finishing touch.

Notes

When serving, garnish with extra green onions. Pair with egg rolls or cucumber salad. Store leftovers in an airtight container in the fridge for up to three days, or freeze portions for up to a month.
