  • 2 apples, cored and diced (preferably sweet varieties like Fuji or Gala)
For the Dressing
  • 1/4 cup plain yogurt or sour cream (Greek yogurt for extra creaminess)
  • 2 tablespoons honey or maple syrup Honey pairs beautifully with the carrots.
  • 1 tablespoon lemon juice Freshly squeezed, if possible.
  • Salt and pepper to taste
Optional Garnishes
  • chopped nuts (like walnuts or pecans) or raisins For garnish.

Method
 

Preparation
  1. In a large bowl, toss together the grated carrots and diced apples.
  2. In a small bowl, whisk together the yogurt or sour cream, honey or maple syrup, lemon juice, salt, and pepper.
  3. Pour the dressing over the carrot and apple mixture, and toss gently to ensure everything is coated evenly.
  4. Sprinkle some chopped nuts or raisins on top for an extra crunch and sweetness if desired.
Serving
  1. Serve it chilled or at room temperature.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 1-2 days. To maintain freshness, consider preparing the dressing separately and mixing just before serving.
