Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar
For the cheesecake filling
  • 2 packages cream cheese, softened 8 oz each
  • 0.5 cups sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined.
  3. Press this mixture firmly into the bottom of your prepared pan to form a crust.
  4. In another bowl, beat the cream cheese, 1/2 cup sugar, and vanilla until silky smooth.
  5. Add in the eggs one at a time, mixing until everything is just combined.
  6. Gently fold in the fresh blueberries and lemon juice.
  7. Pour the cheesecake filling over the crust and smooth out the top with a spatula.
  8. Bake for 30-35 minutes, until the center is set but still slightly wobbly.
  9. Let cool, then refrigerate for at least 2 hours before cutting into bars.
  10. Serve chilled and enjoy!

Notes

These bars are best served chilled with berry sauce or lemon zest. They can be stored in the refrigerator for 4-5 days or frozen for up to 3 months.
