Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
- In a bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined.
- Press this mixture firmly into the bottom of your prepared pan to form a crust.
- In another bowl, beat the cream cheese, 1/2 cup sugar, and vanilla until silky smooth.
- Add in the eggs one at a time, mixing until everything is just combined.
- Gently fold in the fresh blueberries and lemon juice.
- Pour the cheesecake filling over the crust and smooth out the top with a spatula.
- Bake for 30-35 minutes, until the center is set but still slightly wobbly.
- Let cool, then refrigerate for at least 2 hours before cutting into bars.
- Serve chilled and enjoy!
Notes
These bars are best served chilled with berry sauce or lemon zest. They can be stored in the refrigerator for 4-5 days or frozen for up to 3 months.
