  • 1.5 cups mashed bananas (about 3 medium bananas) Use overripe bananas for best flavor.
  • 0.5 cups nut butter (peanut, almond, or sunflower seed butter) Feel free to swap in your favorite nut butter.
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup Can be substituted with honey or agave.
  • 1 cups chocolate chips Add more for extra gooeyness.
  • 0.5 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9×9 baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas and nut butter, stirring until they form a creamy mixture.
  3. Add the rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt to the bowl. Mix well until everything is evenly distributed.
  4. Transfer the mixture into your prepared baking pan and spread it out evenly, pressing down lightly to compact it.
  5. Bake for 18 to 20 minutes, or until the edges are golden brown and the center feels set.
  6. Allow the bars to cool completely in the pan before cutting them into squares.

Notes

For a denser bar, blend the oats into a flour before adding. Experiment with spices or add-ins like shredded coconut, nuts, or dried fruit for personalization. To store, use an airtight container for up to a week or refrigerate. For longer storage, freeze individually wrapped bars.
