  • 200 grams Feta cheese Opt for high-quality Greek feta for best flavor.
  • 4 large Eggs Fresher eggs yield better results.
  • 300 grams Cherry tomatoes Halved, can also use grape tomatoes.
  • 100 grams Fresh spinach Or use thawed frozen spinach.
  • 2 tablespoons Olive oil For drizzling.
  • to taste Salt Essential for seasoning.
  • to taste Pepper Essential for seasoning.
  • optional Fresh herbs (basil or parsley) For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Take a baking dish and crumble the feta cheese right in the center.
  3. Surround the feta with halved tomatoes and a generous handful of fresh spinach.
  4. Drizzle everything with olive oil, then season with salt and pepper to taste.
  5. Use a spoon to create small wells in the feta and veggie mix—this is where your eggs will go.
  6. Crack an egg into each well, taking care not to break the yolks.
Cooking
  1. Bake for about 15-20 minutes, until the egg whites are set but the yolks slightly jiggle.
  2. Optional: Garnish with chopped fresh herbs before serving.
Serving
  1. Serve warm, ideally with crusty toasted bread for dipping.

Notes

Leftovers can be stored in the fridge for up to three days. Reheat gently before serving. Freezing is not recommended due to texture changes in the eggs.
